Luis Manuel Brings his Peruvian Sensibilities to Limo Restaurant in Bab Al Qasr Hotel

Located in a vibrant nook of Corniche, Bab Al Qasr Hotel has emerged as a dining destination to look out for. Built over a decade of experience, Chef de Cuisine Luis Manuel’s culinary acumen has been merited to being the force behind Abu Dhabi’s newest break out restaurant; Limo Restaurant.

Manuel’s passion for the culinary arts began in his grandmother’s kitchen in Arequipa, Peru. She honed his potential as a future patron of the kitchen by revealing the mysteries of Peruvian spices and the alchemy of flavours. Delving further into his calling, Manuel began his journey to stardom in culinary school where he was later selected to be a weekly professor for Peruvian cuisine. “My culinary foundation is Peruvian cuisine. The rigorous training involved in learning its art has benefitted me immensely since you need a strong command of flavour profiles to balance it in food. It is an art to produce robust dishes without its components being too overpowering,” said Chef de Cuisine Luis Manuel.

Chef de Cuisine Luis Manuel has brought his magic to Abu Dhabi, at the city’s first Peruvian restaurant, Limo Restaurant. “It is a privilege to prepare the food that represents my home and guests have the opportunity to experience authentic Peruvian food, prepared using Peruvian techniques. Starting from plating, presentation, the look and the drama, each and every dish on the menu emulates Peru.”

At Limo Restaurant Chef Manuel incorporates the best of the best ingredients. In order to maintain authenticity, he imports the spices and raw materials from South America on a weekly basis while sourcing fish, and sea food from the best local suppliers. Regarding his trademark signature Chef Manuel said, “My food has the Peruvian soul and flavour of the Aji (Peruvian Chili). It is the ultimate seal of Peru and without it, it just wouldn’t be Peruvian cuisine. Other components include potato, lime, garlic and onion that are a must”.  

Limo Restaurant’s Ceviche, Hummus and Nasi Goreng, have quickly risen to being iconic culinary landmarks of Abu Dhabi’s thriving food scene. “Peruvian food has its own personality that the residents of Abu Dhabi seem to really enjoy. It’s fresh, lively, and an adventure, and I look forward to welcoming guests for the new season to the Peru of the UAE,” concluded Chef Manuel.
